So I've been home for a day and have not touched my suitcase yet. I know, but family came in the same day we got back so I've had absolutely no time to unpack. Our two cousins are from Laguna Beach, Cali and they love to cook! (great for me)

This morning we made a Spanish Tortilla consisting of potatoes, onions, prosciutto (shipped from Italy), and parsley. It probably took us about 4 hrs to get everything ready because we had to go to the grocery store then...well I'm not quite sure why it took that long. Rigo (cousin) is very particular and must have everything perfect, so maybe that why.  I will say that I was starving by the time it was done.

 It came out so nice and full! It was absolutely flavorful!

All I've been doing today is cooking and eating, cooking and eating...I love it though! We just finished making dinner too. 

We made a nice appetizer of tomato, basil and mozzarella with olive oil and vinegar 
drizzled on top with Manchego Cheese on the side.
We also made Shrimp Pasta (linguini, tomatoes, shrimp, olive oil)

Now I'm off to go watch a movie to finish off our wonderful day. 
Hopefully tomorrows food will be just as good!

Last Day

Sorry that I've been somewhat slow. So lets see, Christmas Day was frightening. 
Why, because we went through a double black diamond expert slope and had to climb up some of it to get to the powder we were looking to ski through. However, I got stuck and had to take off my skis and when I started to climb, I slipped and slid about 25ft down the Mt. I really thought my life was over with. I thought about Survivor, put my skis back on and skied down the rest of the way, trying to follow tracks. I was mad for my family leaving me all stranded, but luckily I survived!

Other than that incident, everything else was okay. 
The crowd came in yesterday and the slopes were quite full today. 
It's always scary when there are a lot of people because you 
always feel like you're gonna hit someone; luckily I didn't though!

Today was the last day, very sad. We skied all day; we were definitely lucky because it has been sunny with clear skies ever since we got here! I must say needs to snow. The slopes are getting a bit icy.

I really do not want to leave. I'm hoping in the future I will be able to live here during the summer and winter and somewhere else for spring and fall...that would be the life.

Christmas Eve

Wow I'm soar. Julia killed us yesterday and today, well today was even harder. I was much more comfortable with myself though and so was the rest of my family. We skied really well today; the hardest I would say was going down 'Happy Thought'. It's a double black diamond, narrow, through trees, plus moguls. It was intense and frightening, but after you finish it you feel so accomplished. It was awesome.

It was a gorgeous day once again! Clear blue skies and much warmer than yesterday. 

Oh and I fell like three times today and lost my skis every time! The worst one was when I was trying to make a hockey stop and spray my dad with sister tried to do the same thing and instead ran into me, pushing me back into a middle split and then woosh both of my skis popped off. What a great fall that was. I was so mad at my sister, but I'll get her back tomorrow.

Dinner was at 9545(elevation), and it was Mexican themed. 
I had a Lamb Meatball Soup...not that Mexican, but it was spicy and fulfilling. 

It doesn't feel like Christmas Eve at all, but tomorrow we are opening our Secret Santa gifts
which will be quite exciting. Hopefully I get something nice! Well I'm off to watching
'Christmas Vacation' with the family. Have A Very Merry Christmas!

First Day Skiing

What a great day to start skiing. It was sunny, absolutely clear, and although the high was 27 degrees the sun kept you quite warm on the slopes. We started off the day having breakfast at the hotel; very nice. I had two boiled eggs that were accompanied with roasted red potatoes/onions and tomatoes; it got me going.

After we got dressed we met up with our instructor named Julia. I love her accent...she's from New Zealand. We learned a lot from her today, and she definitely pushed us cause I am extremely soar. Usually we start off slow, but let me tell you, we went on black diamonds with moguls all the way which I love; but on the first day I don't know. Anyways, we had lunch at Giuseppe's at about 12,000ft. I had a chicken tortilla soup; made me nice and warm.

 We continued on skiing, and later stopped for some hot chocolate. Out of all the hot chocolates I have had, Telluride has the best. Rich and well-made + lots of marshmellows and whip cream :)

My mom and I went to take a break in the Jacuzzi, very relaxing. We all got ready and headed downtown for dinner. We ate dinner at La Marmotte; a french restaurant.
I had a tasty, Creamy French Onion Soup as an appetizer, Roasted Colorado Lamb Sirloin as my entree, and A Rocky Mountain Crumble for dessert. Everything was fantastic, especially since we got to sit in a cozy room that was reserved just for us.

I'm finally at Telluride, CO! And its snowing, snowing, snowing at 23 degrees F. I absolutely love it here because its secluded and it doesn't matter who you are, you blend in perfectly.

So this morning we woke up at 3am, and I made myself some nice juice...we were all so wide awake, but I have to say that I am feeling quite tired now. Luckily everything went smoothly through the airport, especially when we have nine of us traveling together. (Our Family + Friend's Family)

to get to Telluride. We were driving through a snowstorm, but as we 
got closer to the top it started clearing up. The view was breathtaking,
I wish I could live here! Someday hopefully!

Once we arrive to our hotel, we settled in, then tried on our skis so that they would be ready for tomorrow morning. We walked around Mountain Village freezing our butts off but it felt so nice, especially since at home its practically 70 degrees in the middle of December...ridiculous!

So I've been packing pretty much all day and I feel as if I'm forgetting something, but don't know what it is. Only a few more hours till I'm off to Colorado!! We board at 5:20am and head over to Atlanta where we have a layover for 2 hours; then it's off to Montrose Airport...and we better make this one cause there's only one a day! We missed the flight last year and let me tell was absolute hell! So please pray that we make it.

Later today my family went to church celebrating Christmas. Afterwards we had dinner at Cafe Caturra; a very sophisticated restaurant with Italian and Mediterranean cuisine. I had a lovely Tomato-Basil Soup; creamy with a hint of spice that added a nice kick to it. 
Ahh I almost forgot! I have a Bichon named snowy and he loves to look out the window. I found him laying in between my random stuffed animals and thought he looked so cute! Take a look!

The Nutcracker

The Nutcracker has always been a huge part of my life. When I was nine years old, I performed in the Nutcracker as a party girl with the Carolina Ballet (professional ballet company in Raleigh, NC). After that, I was party girl once again and Clara for the next two years. I defintetly enjoyed myself and would do it all over again.

This evening my mother and I went to watch the performance. My former ballet teachers daughter (Nicole) was performing Clara and she was spectacular! I wish i was up there with her! They changed a lot of the scenery, tricks/magic, making the show much more interesting. I was able to take a few pics with my dear little friend Nicole after the show...

Celebrating An Early Christmas

Hello everybody!!

So I decided to start a blog because I will be studying abroad for a semester in Spain starting Jan 2012! I'm quite excited and am eager to get on the plane and go already; however, I am leaving to Telluride, CO this coming Thursday to go skiing first. It's been a family tradition for quite a while now, and its definitely a wonderful place to go for the holidays. Definitely check it out...

Today, my family celebrated Christmas since we will be in Colorado on the 25th. It was a bit weird, but its always exciting to open presents and be with your family.

  All the presents under the tree!! 

Best present I must say was the JUICER! What a great invention! You can practically put anything you want from pineapple, carrots, sweet potato, kale, etc. and it will make it into a nice healthy juice. I'd never thought I'd be able to drink vegetable juice, but with enough pineapple or apple, its actually quite tasteful. My friend started a 10-day detox diet with this Juicer and has already lost 9 lbs in 5 days...breakfast, lunch, and dinner.I only have four days before I leave to Telluride, but hopefully it'll somewhat detoxify myself.

Later on, we had a few friends over for a small Christmas Party. My dad made Cuban pork, which was absolutely amazing!!! We had rice to accompany the pork, salad, spinach artichoke dip I made, and my moms spring roll...weird mix yes, but a dad from Cuba and a mom from Japan makes everything much more interesting. I also made Cannolis for the first time!!! It was hard using a pastry bag, but well worth the work!
