Jewelry Love

So happy its Friday! Although I came back to school on Monday, I think four-day weeks tend to feel much longer than they should. While I was home though, my mom's cousin had me try on some of her jewelry she sells in Japan. Her site is called Spicy-Lips and they sell anything from earrings, bracelets, necklaces, to bellybutton rings. The site is in Japanese, but hopefully English translation will come out soon;) If you are interested in any of the jewelry, just let me know! They are all wonderful and worth getting!

North Hills

I can smell fall in the air. Each day it gets cooler in the mornings and it just brings such a great feeling:) I finally feel stress free...No more party planning for me for a while, although I really do enjoy it. I've always wanted to go into event planning...maybe someday. The other day I took a walk through North Hills shopping mall. A wonderful area with so many cute definitely can't just go window-shopping here.

Surprise Party A Success

I've been waiting quite some time to be able tell you guys what I had been planning and now I can finally let it out! Since May, I've been planning my mom's surprise party for her 50th with my dad, siblings, and a couple of other people. It was a successful day full of happiness and lots and lots of emotions.

My dad brought some of my moms cousins and aunt all the way from Japan, which led to an even bigger surprise! We all arrived on Friday night and stayed at a hotel. The next morning, my dad took my mom and their two friends out golfing. While they golfed, we went to the house and started setting up.

Once I got the call from my dad, I made all the guests hide and as soon as she walked in, we popped out and yelled "surprise!". It was epic! She was shocked when she saw my aunt and cousins...we had them pop up one by one:) Lots of happy-crying involved;)

The entire day went smoothly and it was great. My cousins pushed my mom into the pool and then I got pushed in...wonderful.

The food was delicious. We had a wonderful friend Masa (owner of Waraji) be our sushi chef for the day and we had food catered from Prestonwood Country Club, as well as three servers/bartenders help us out. It was actually quite funny since my boss from this summer helped out...role reversal!

It was a successful day full of happiness and love. My mom was definitely shocked and I'm glad it worked out. It will definitely be a day to forever remember. Happy Birthday Mama!

Can You Smell The Cookies...

What a long day I had; an exam at 8am this morning and another one right after. I think my brain is completely fried. My roommate and I were planning on going to eat at Moe's for dinner, since it was "free queso" day, butttt we decided we better stay healthy;)

I made myself a nice an Asian Stir Fry for dinner. It's simple and really easy for anyone whose looking for a fast, yet nutritious dinner.

  • Green & Red Pepper
  • Carrots
  • Sugar Snap Peas
  • Tofu (firm)
  • Turkey Sausage (Kielbasa)
  • Garlic minced 
  • Soy Sauce
  • Sesame Oil
  • Salt & Pepper
  • Crushed Red Chili Pepper
  1. Chop all the vegetables, and feel free to add anything else you like. 
  2. Add Olive Oil to the skillet and add all vegetables and sausage. Cook for about 5 to 6 minutes.
  3. Add the tofu, soy sauce, and sesame oil. Add all the seasoning to your liking, and let it simmer for a couple of minutes. 
  4. Serve with rice 

After dinner, I went kind of not so healthy...I made Oatmeal Cookies!!! Guilty! Not only did I make regular oatmeal cookies, but I made little Peanut Butter Chocolate Oatmeal Cookie Cups! They are amazing! Check them out:
Fill the cups with cookie dough, then chocolate chips, and then peanut butter!
Bake 10-12min
Cool for about 5 minutes
All done! Simple and Delicious!

In the end, I made up for not going to
Moe's....but I think this was well
worth it! Now I'm off to get some

Fall Must-Haves

Fall's practically here and I just love this season because it means boots and warm sweaters! I found some great finds and definite must haves for this upcoming season. Take a look:

Alright, so after that lovely pasta I had last night, I tried to go healthy tonight, by making myself an easy pizza using a totilla/flatbread.

Simple and healthy, take a flat-bread or a tortilla and spread pesto on one side, topping it off with peppers, olives, onion, turkey sausage, mozzarella cheese...(anything you like) and fold it in half. Place the pizza on a warmed skillet, and cook until brown and crispy or until the cheese is melted. Slice into thirds and serve immediately. Dip it in some tomato sauce if you want to add a kick to it!

Pasta Pasta Pasta

I had planned on eating healthy today...I guess I say that everyday, but my roommate was in the mood for pasta so we decided to make Spinach Ricotta Pasta. It's a simple recipe, very similar to mac & cheese, so if you have kids around, this will definitely win them over!

Spinach Ricotta Pasta

  • 1 onion, chopped
  • 1 shallot, chopped
  • 2 cloves of garlic, minced
  • Box of spinach (4-5 cups)
  • 1/4 -1/2 cup of Ricotta Cheese
  • 1 egg
  • Box of pasta shells
  • 4Tbs salted butter
  • Salt & Pepper for seasoning 
  1. Boil water for pasta (add salt and olive oil) & add pasta
  2. Chop both the onion & shallot and mince the garlic. Heat a fry pan and melt butter
  3. Add onion, shallots, garlic and cook over medium heat. Add spinach. Season with salt & pepper.
  4. In a mixing bowl, whisk the egg and ricotta cheese 
  5. Drain the pasta and add it to the ricotta mixture. 
  6. Add the spinach mixture to the pasta and mix together. Add salt & pepper to your liking

I made a Caprese Salad to go along with it
Other than food, I have some new shoes for you! Master menswear with these "Mona" shoes. Loafers are in and I'd say it's a smart investment! Great with jeans, a dress; make your look anything from preppy to feminine.

A Night Out

Hello Monday. My class was cancelled this morning, giving me a wonderful start to my day:) I made myself work hard and concentrate:/... and well, I definitely feel accomplished now. I took a stroll down Main Street this evening and had my own Fashion Night Out;)

Let's Go Gamecocks!

Although I had work yesterday, I finished early enough to make it to our home football game!! First one for me this season:) Tailgating down south is crazy. People start so early, its literally an all day event. I met up with many of my wonderful friends and enjoyed a great game! And yes we won...49-6!

By the way, has anyone heard of "Gangnam Style" by the famous Korean, Psy???? Well he was recently on the Today show in NYC, and sang his famous, super-catchy song. If you havn't heard it, it's definitely a must! What 's so great about this song is that there are dance moves to go along with the chorus, and my roommate and I learned it and had a jam session at our tailgate! It was great! My friend took a video of us actually...we were just trying to have some fun!!!

Today, I woke up and made delicious cupcakes for my friends birthday. I decided to make Raspeberry Cupcakes with Dark Chocolate icing. They came out perfect and I was quite satisfied...the only bad thing about baking cupcakes is that I always have to "try" everything...the batter...the icing...then there's the actual cupcake...I think I ate about six today:P
Mini Cupcakes Baking!
Using a paring knife, cut a 1-in. deep piece from the top and fill it with raspberry jam.
Replace the cutout piece
Frost the cupcakes
Top them off with raspberries!

Sunny in Cola

Happy Friday everyone! The weather has been perfect this week in Cola (Columbia). This is probably the first time I've been enjoying my walk to class:P I'm so glad the week is over, although I do have work tomorrow, but afterwards I'm going tailgating and attending our home game against UAB!
