Hearty and Healthy: Spaghetti Squash

Ever had Spaghetti Squash?? I've been hearing about it a lot lately and I decided to give it a try. I needed something new and fun to cook, and this was the perfect pick.

Spaghetti Squash is a large, oval-looking, seed-bearing winter squash. It's yellow/orange in color and well, it reminds me of Halloween season because it's like cutting a pumpkin. I was so eager to make this all day that I drove to Whole Food right after my class. Surprisingly, they didn't carry it; so I went off to Earth Fare and what-do-you know...they don't have it either! I started to get depressed, especially since I've been waiting to make this all day! I decided to go to Food Lion since I needed to grab a couple of other things and hello...Spaghetti Squash! Out of all the places, who knew that Food Lion would be the store carrying it!

Once I got home, I headed to the kitchen and began my project. It was all knew to me, but I enjoyed the process and it tasted delicious.

Heat Oven: 375 degrees
The squash is too hard to cut through so i took a small knife and picked at it. I put it on a pan covered with aluminum foil and baked it for about 30-40 min. I let it cool for a little and cut in half and scooped out the seeds with a spoon. I took one half and placed it face down on the pan and baked it for another 30 min. (It's only me, so I used only half of the squash and saved the rest for another day)

After it finished baking, I let it cool for about 15 min and I began to scrape the side with a fork. I heated a saucepan with olive oil, garlic, and rosemary creating a nice aroma and then later added the spaghetti squash. Once it heated through I added some parsley...sadly I didn't have any Parmesan cheese, but if you do, it'd make a great last touch! And there you have it! Spaghetti Squash with Olive Oil & Herbs.

Navy Prevails At 2013 SAG Awards

The 2013 SAG Awards arrived hot and ready full of best dressed actors. Navy seemed to be the color of this years event and well, it definitely was a huge hit. An ailing Jennifer Lawrence arrived wearing a navy Dior Haute Couture looking fresh and well after struggling with pneumonia. Here a couple of last night's looks:

Today, after a long day of classes I received a wonderful gift in the mail from a good friend of 
mine. It was an Ansel Adams Calendar Book with the most beautiful black and white photography. It was
so thoughtful and made my day:)

2013 is the Year of the Snake with a whole lot of reptilian styles. Of course, if you're not into wearing the "real" snake skin, many manufactures use a mixture of different compositions to make a snake-looking texture. Here are a couple of my favorite snake trends:

70 More Class Days

Just like the title says...70 more school days til I'm a senior! Woop Woop! First day of class was tough! First off, it's January and it was 80 degrees today?!?!? Seriouslyyyy....I was dying on my walk to class and I had four. This semester I am taking 7 classes/21 hrs; just hope I survive.

Three of my professors were very young, looked practically like my age. Hopefully their looks aren't deceiving and will be easy on us. My last class of the day was Management, a large lecture class, about 370 students. I think every seat was taken, literally. I always try to choose easy or "well-rated" professors and well, this professor seemed to be the best out of all of them.

The man is crazy, weird/funny. For half the class he talked about Kim K &..."chunkie"...Khloe...I can't believe he said that!!! And then he went on comparing Kim to Kate Middleton saying one has a degree and is classy and so on. Now I know where he stands with the Kardashian's haha. Hopefully class will be like every time, cause that would be a great way to end the day;)

So is Jodie Foster retiring??? She definitely hinted at it during her coming out speech at the globes, but truth is, she will continue in the show business! I got teary-eyed during her speech. She is a spectacular actress and I'm eager to see what will come of her in the near future.

So I can't stop talking about the globes. It was really a magical night and I can't wait for the next award show!
Congrats to Olivia Wilde who is engaged & got an Olympic-sized ring from Jason Sudeikis!!

A Night of Elegance

The Golden Globes was definitely a night of true elegance. The red carpet was taken over by stunning celebrities in beautiful gowns and sleek tuxedos. There wasn't one person who you would've been like "ugh", it was a night full of couture. The red carpet was filled with vibrant colors with a couple of sky blue/seafoam looks. I have to say the red carpet is probable one of my favorite parts especially when you watch it on E!. By the way, Giuliana's first look in Oriett Domenech during the Countdown was lovely. The stars were heating up the carpet and those who stood out to me were Katharine McPhee, Nicole Kidman, Eva Longoria, and Kate Hudson.

People's Choice Awards 2013

Well things really did heat up last night during the 39th Annual People's Choice Awards at the Nokia Theater in LA. The Hunger Games went home big with five awards and it was just a night full of excitement and of course, amazing style. Who didn't look good last night?!?!? I picked out some of my favorite looks from last night! And whats even more exciting is that my all-time favorite actress, Jennifer Aniston won "Favorite Comedic Movie Actress." Instead of her usual romantic gown, she rocked a sexy, funky leather dress...she always looks good.

Hello Again!

Happy belated New Year's everyone! Although 2013 started off well, right afterwards on the 3rd, I had oral surgery. I've been in pain and have been literally sitting on the couch for the past week...wonderful. Good things have come from this too though. I've caught up on numerous TV Shows and I've started watching Revenge after hearing so much on the series. It's definitely different from what I've ever watched, but it's quite good.
(I'm a big 24, Criminal Minds, & CSI fan)

I still have one week left before classes start up again and have quite a lot to do, including starting a book by Kelly Cutrone called, "If You Have To Cry, Go Outside: And Other Things Your Mother Never Told You." Ever since watching The Hills and The City, I've loved Kelly. She's fierce and gets straight to the point. Kelly's all about PR and such an inspiring woman, that I felt that I just had to read this book.

I also just finished reading Safe Haven by Nicholas Sparks...a must-read! I actually saw the trailer about a month ago and became suspicious about what the girl was running away from. I won't spoil it for you guys, but it's a great story for those who love Nicholas Sparks and of course Josh Duhamel and Julianne Hough who are starring in the upcoming movie, set to be released this February.
